  • 1 pkg. lemon cake mix (without pudding in mix)
  • 1/2 c. cooking oil
  • 1 small pkg. coconut cream pudding mix (not instant)
  • 4 eggs
  • 2 Tbsp. poppy seed
  • 1/2 tsp. lemon extract
  • 1 c. water

Directions

    Combine all ingredients and beat 3 minutes.

    Bake in 2 greased loaf pans (8 1/2 x 4 1/2 x 2 3/4-inch) at 350° for 40 minutes. Spread slices with butter.
