- 6 thin-skinned lemons
- boiling water
- 1 tsp. ground sage
- 1 1/2 c. sugar
Directions

1Trim rind from two lemons and cut into fine strips.

2Cover with boiling water in a small bowl.

3Drain, reserving lemon water. Cut peel and white membrane from all lemons and cut them into thin slices, removing all seeds.

4Place slices in a glass bowl. Mix sage, sugar and one cup reserved lemon water in a small saucepan.

5Bring to a boil and boil 4 minutes or until thick.

6Add reserved lemon strips to the pan and pour the sauce over the lemon slices.

7Cover and chill.

8Good with fowl or pork.

9Makes 2 2/3 cups.
