Lemon Slice

  • 1 package Plain Sweet Biscuits
  • 3/4 cans Condensed Milk
  • 1 cup Coconut, Desiccated
  • 7 Tablespoons Butter (100g)
  • 1 whole Lemon, Juiced And Zested
  • 2 cups Icing Sugar

Directions

    Crush the biscuits until they are more or less crumbly in texture (it'd okay to have a few bigger pieces).

    In a large bowl, combine the crushed biscuits, condensed milk, coconut, butter and finely grated rind from the lemon. Stir until well combined.

    Press firmly into a slice tin.

    Prepare icing by combining juice from the lemon with icing sugar. A little water may be added to achieve the desired consistency.

    Ice the slice and sprinkle with extra coconut.

    Refrigerate until set, about 1 hour.
