Lemon Spaghettini

  • 1 package of spaghettini
  • 1/2 cup grated parmesan cheese
  • 3-4 lemons
  • 2/3 cup olive oil
  • Fresh basil
  • Salt and Pepper
  • Small amount of pasta water

Directions

    Before juicing the lemons, zest at least 3 lemons. Juice the lemons to yield 1 cup of lemon juice.

    Whisk cheese, olive oil, lemon juice and add 1-2 ladles of pasta water. Add this to drained spaghettini. Add lemon zest, several thin slices of lemon, salt/pepper and fresh basil and serve.
