- 3 eggs, separated
- 1/3 c. lemon juice
- rind of 1 lemon
- 1 c. sugar
- 1 Tbsp. flour
- 1 Tbsp. butter, melted
- 1 1/4 c. milk
- 1/3 tsp. salt
Directions

1Beat egg yolks until thick.

2Add lemon.

3Mix sugar, flour and salt; add to egg mixture.

4Stir in melted butter and milk.

5Fold in stiffly beaten egg whites.

6Put in 10-inch pie pan.

7Bake in hot oven at 450° for 10 minutes, then at 350° for 20 minutes.
