- 3 Tbsp. softened butter or margarine
- 1 1/4 c. sugar
- 4 eggs, separated
- 3 Tbsp. flour
- 1 1/4 c. milk
- 2 Tbsp. grated lemon rind
- 1/3 c. lemon juice
- dash of salt
- 1 unbaked 10-inch pie shell
Directions

1Cream butter; gradually add sugar, beating well.

2Add egg yolks, flour, milk, lemon rind, juice and salt.

3Beat until smooth.

4Beat egg whites (at room temperature) until stiff peaks form; fold into lemon mixture.

5Pour into pie shell.

6Bake at 375° for 15 minutes; reduce heat to 300° and bake 45 to 50 minutes. Cool.

7Yields one 10-inch pie.
