- 1 recipe pastry for 1 pie
- 2 Tbsp. flour
- 1/2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 c. sugar
- juice and grated rind of 1 lemon
- 1 c. milk
- 4 eggs, separated
Directions

1Make the pastry and line a 9-inch pie plate.

2Combine the flour, cornstarch, salt and sugar.

3Add the rind and lemon juice, milk and beaten egg yolks.

4Mix the ingredients very well, then fold in 3 stiffly beaten egg whites.

5Beat remaining egg white slightly and spread over the inside of the unbaked pastry crust. Pour filling into pie crust.

6Bake at 425° for 15 minutes, then at 325° for 25 minutes.
