  • juice and grated rind of 1 lemon or lemon flavoring
  • 1 c. sugar
  • 3 Tbsp. flour
  • 3 eggs, separated
  • 1/2 tsp. salt
  • 2 Tbsp. butter or margarine
  • 1 1/2 c. hot water
  • 1 (9-inch) pie shell

    Cream butter; add sugar, flour and egg yolks.

    Beat well.

    Add hot water, salt and lemon rind and juice.

    Fold in stiffly beaten egg whites.

    Pour into a 9-inch pie shell and bake 45 minutes at 325°.
