- 3 Tbsp. butter
- 1 1/4 c. sugar
- 4 eggs, separated
- 3 Tbsp. flour
- dash of salt
- 1 1/4 c. milk
- 1/3 c. lemon juice
- grated rind of 2 lemons
- 1 unbaked pie shell
Directions

1Beat butter and sugar.

2Beat in egg yolks.

3Add flour, salt, milk, lemon juice and grated rind; beat well.

4Beat egg whites until stiff, not dry.

5Fold into other ingredients.

6Bake at 400° for 15 minutes, then at 325° for 40 minutes or until top is golden and pick inserted in center comes out clean.
