  • 1 1/4 c. sugar
  • 4 eggs, separated
  • 3 Tbsp. flour
  • dash of salt
  • 1 1/4 c. milk
  • 1/3 c. lemon juice
  • grated rind of 2 lemons
  • 1 unbaked pie shell

    Beat butter and sugar.

    Beat in egg yolks.

    Add flour, salt, milk, lemon juice and grated rind; beat well.

    Beat egg whites until stiff, not dry.

    Fold into other ingredients.

    Bake at 400° for 15 minutes, then at 325° for 40 minutes or until top is golden and pick inserted in center comes out clean.
