- 1 Tbsp. melted butter
- 1 c. sugar
- 2 eggs, separated
- 1/8 tsp. salt
- 1 lemon rind and juice
- 1 c. milk
- 1 pie crust (unbaked)
Directions

1Beat together the flour, butter, sugar, egg yolks, salt, lemon rind and juice. Add the milk; fold in the egg whites whipped stiff. Pour into a deep pie plate lined with crust 1/4 inch thick. Bake 10 minutes in hot oven at 425°, then reduce the heat to 375° and continue baking 30 minutes.
