  • 2 eggs, separated
  • 1 c. sugar
  • 2 Tbsp. flour
  • 2 Tbsp. margarine
  • juice of 1 lemon or 2 Tbsp. bottled juice
  • 1 tsp. lemon extract
  • 1 (9-inch) pie crust

Directions

    Beat egg yolks.

    Add sugar, flour, margarine, lemon juice and lemon extract. Mix well.

    Beat egg whites separately until stiff, fold into other ingredients.

    Pour into a baked pie shell and bake at 400° for 10 to 12 minutes.
