Lemon Sponge Pudding

Ingredients

  • 1 c. sugar
  • 1/4 tsp. salt
  • 1 Tbsp. melted butter
  • grated zest and juice of 1 lemon
  • 1/3 c. flour
  • 2 egg yolks
  • 1 c. milk
  • 2 egg whites, stiffly beaten

Directions

    Mix first 7 ingredients in order, blending well.

    Fold in egg whites with rubber spatula.

    Pour batter into lightly greased ovenproof bowl set in a pan of water.

    Bake at 350° for approximately 40 minutes or until pudding turns golden brown and pulls away from sides of bowl.

    Makes a light cake with a very rich lemon syrup.

    Serves 4.
