Lemon Sponge Pudding

- 1 c. sugar
- 1/4 tsp. salt
- 1 Tbsp. melted butter
- grated zest and juice of 1 lemon
- 1/3 c. flour
- 2 egg yolks
- 1 c. milk
- 2 egg whites, stiffly beaten
Directions

1Mix first 7 ingredients in order, blending well.

2Fold in egg whites with rubber spatula.

3Pour batter into lightly greased ovenproof bowl set in a pan of water.

4Bake at 350° for approximately 40 minutes or until pudding turns golden brown and pulls away from sides of bowl.

5Makes a light cake with a very rich lemon syrup.

6Serves 4.
