  • 1 c. sugar
  • 1/4 c. cake flour
  • 1/8 tsp. salt
  • 2 Tbsp. butter
  • 5 Tbsp. lemon juice
  • 1 Tbsp. grated lemon peel
  • 2 well beaten egg yolks
  • 2 egg whites, beaten until peaks form
  • 1 c. scalded milk

Directions

    Mix sugar, flour and salt.

    Add butter, juice, lemon peel and egg yolks, then scalded milk.

    Fold in egg whites.

    Set in a 1 1/2-quart buttered pan in hot water.

    Bake at 325° for 1 hour. Serves 4 to 6.
