  • 1 c. Gold Medal flour
  • 1/2 c. butter
  • 1/4 c. confectioners sugar
  • 2 eggs
  • 1 c. granulated sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. lemon juice

Directions

    Heat oven to 350° (moderate).

    Blend flour, butter and confectioners sugar thoroughly.

    Press evenly in square (8 x 8 x 2-inch) pan.

    Bake 20 minutes.

    Beat rest of ingredients together. Pour over crust and bake 20 to 25 minutes more.

    Do not overbake! (The filling puffs during baking, but flattens when cooled.)
