Ingredients

  • 34 cup butter, room temp
  • 12 cup powdered sugar
  • 2 tablespoons powdered sugar
  • 1 12 cups flour
  • 4 eggs
  • 1 12 cups sugar
  • 14 cup flour
  • 23 cup lemon juice, fresh squeezed
  • 1 tablespoon lemon zest (optional)
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 14 cup powdered sugar

Directions

    cream butter with 1/2 cup + 2 tbs powdered sugar until creamy.

    beat in flour to form crumbs and press into a foil lined and greased 13x9 baking dish (can use 9x9 for thick bars).

    bake at 350 for 20 minutes.

    while baking beat 4 eggs with the granulated sugar until very pale.

    beat in flour, lemon juice, zest, b. powder and salt.

    pour over hot crust and reduce oven to 325

    bake 20-25 minutes.

    cool and sift more powdered sugar (about 1/4 cup) over the bars, refrigerate.
