- 2 tablespoons fresh lemon juice
- 1 tablespoon vegetable oil
- 1/2 teaspoon fine sea salt
- 8 ounces firm silken tofu, drained

1Finely grate ginger; place ginger on several layers of damp cheesecloth. Gather edges of cheesecloth together; squeeze over a small bowl to extract 1 teaspoon ginger juice.
