- 1 onion, diced
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 34 cup water
- 1 14 cups chicken stock
- 1 teaspoon grated lemon, zest of
- 1 (10 ounce) box couscous
- 12 cup fresh parsley, chopped
- 12 cup fresh basil, chopped
- 14 cup of fresh mint, chopped
- 1 tablespoon fresh lemon juice
- salt & pepper
Directions

1heat 1 tbsp oil in a skillet.

2add onions and saute 3-4 minutes.

3add garlic, stir.

4add water, stock, lemon zest, bring to a boil.

5stir in couscous, cover, remove from heat, let it stand 5 minutes.

6fluff with a fork, add fresh herbs, lemon juice, 1 tbsp oil, salt& pepper to taste.
