- 1 lb. lentils
- 10 c. water
- 3 to 4 onions, coarsely diced
- 4 to 5 cloves
- 1 large bay leaf
- 2 Tbsp. minced parsley
- salt and pepper
- ham bone or smoked knuckle
Directions

1Put all in soup kettle, except parsley. Bring to

2a boil, then simmer gently 1 hour.

3Add parsley. Continue at low.

4Simmer until lentils are very soft. Crush some lentils to make thicker soup. Serve with boiled frankfurters, or better still, bratwurst, sliced.

5Pass red wine vinegar to add to soup at table.
