- 1 c. uncooked lentils
- 4 c. water
- 1 large onion, chopped
- 1/4 c. olive or vegetable oil
- 1/8 tsp. pepper
- 1/8 tsp. cumin (optional)
- 1/8 tsp. garlic powder (optional)
- salt to taste
- 1/2 c. uncooked rice
Directions

1Rinse lentils and place in a pan with water.

2Boil for 20 minutes on medium fire.

3Saute chopped (or julienned) onion in oil until light brown.

4Add onion and residue, seasonings and rice to the lentils.

5Cover and cook for 20 minutes.

6Stir occasionally. Serve on a platter; this thickens as it cools.
