- 2/3 c. whole wheat flour
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 c. firmly packed brown sugar
- 3/4 c. egg substitute
- 3/4 c. nonfat buttermilk
- 1 (8 oz.) can crushed pineapple in juice, drained
- 2 c. grated carrots
- 1/3 c. raisins
- 3 Tbsp. vegetable oil
- 2 tsp. vanilla extract
Directions

1Combine first 5 ingredients, set aside.

2Combine brown sugar and next 7 ingredients in large mixing bowl.

3Stir in dry ingredients and beat at medium speed until well blended.

4Spray 13 x 9 x 2-inch pan with vegetable cooking spray.
