Light Macaroni Ring Salad

  • 1 small box macaroni rings
  • 1 can peas (small), drained
  • salt and pepper to taste
  • 1/4 c. chopped onion
  • 3 hard-boiled eggs
  • 1/2 c. salad dressing, mixed with a little light cream or milk
  • 1 Tbsp. vinegar (according to taste)
  • 1 Tbsp. sugar (according to taste)

Directions

    Cook macaroni rings according to instructions.

    Drain and cool.

    Add onion, peas, diced eggs, seasonings and salad dressing mixture.

    Chill thoroughly.

    Serves 6 to 8.
