- 2 Tbsp. olive oil
- 2 cloves minced garlic
- 3 whole chicken breasts, halved and skinned
- 1 large onion, cut in rings
- 1/2 c. chopped red or green pepper
- 1 (16 oz.) can tomatoes, drained
- 8 oz. can tomato sauce
- 1/4 c. white wine
- 2 (4 oz.) cans sliced mushrooms
- 1/4 tsp. basil
- 1/2 tsp. oregano
- 1 bay leaf
- 1/8 tsp. black pepper
Directions

1Heat oil and garlic.

2Brown chicken 5 minutes each side. Remove chicken and set aside.

3Cook onion and green or red pepper until tender.

4Add remaining ingredients, including chicken. Cover and simmer about 1/2 hour.

5Remove bay leaf.

6Serve over rice or linguine.
