- 2 c. dried lima beans
- 2 tsp. salt
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. oil
- 2 c. cooked tomatoes
- 1/2 to 1 tsp. chili powder
- shredded American cheese
Directions

1Wash beans.

2Add 1 1/2 quarts of water and cook until tender (about 1 1/2 hours).

3Add salt after first hour of cooking.

4Saute onion and green pepper in oil.

5Add rest of ingredients to beans. Pour into casserole; season with salt and pepper.

6Sprinkle with cheese.

7Bake 25 minutes at 350°.
