Lima Bean Bake

  • 2 c. dried lima beans
  • 2 tsp. salt
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. oil
  • 2 c. cooked tomatoes
  • 1/2 to 1 tsp. chili powder
  • shredded American cheese

Directions

    Wash beans.

    Add 1 1/2 quarts of water and cook until tender (about 1 1/2 hours).

    Add salt after first hour of cooking.

    Saute onion and green pepper in oil.

    Add rest of ingredients to beans. Pour into casserole; season with salt and pepper.

    Sprinkle with cheese.

    Bake 25 minutes at 350°.
