Lime Scallops

- 2 pounds sea scallops
- 1/2 cup fresh lime juice
- 3 tablespoons olive oil
- Dash of salt and pepper to taste
- 2 limes, in wedges, for skewering
- Garnish: 2 tablespoons chopped cilantro
Directions

1Mix the scallops, lime juice, oil, and seasonings together in a glass bowl and let marinate for at least 2 hours.

2When youre ready to cook, thread the lime wedges and scallops on skewers1 lime wedge, then 3 scallops, etc.

3Cook under the broiler or over a charcoal grill for 5 or 6 minutes, turning once.

4Serve the skewers sprinkled with the cilantro.
