  • FOR THE CRUST:
  • 2 cups Flour
  • 1/2 cups Butter
  • 1/3 cups Sugar
  • 1/4 teaspoons Salt
  • 1 teaspoon Vanilla

  • 3 whole Eggs
  • 1-1/3 cup Sugar
  • 3 Tablespoons Flour
  • 2/3 cups Fresh Lime Juice
  • 2 teaspoons Vanilla
  • 5 drops Green Food Color, Optional

Directions

    1. Preheat oven to 350°F. Grease/spray a 9x13 inch baking pan.

    2. First prepare the crust. In the bowl of a food processor, mix the flour, butter, sugar, salt and vanilla until fully combined and crumbly.

    3. Press firmly into the bottom of pan and bake for 15 minutes.

    4. Meanwhile get the filling/top started. In a medium bowl, whisk eggs, sugar, flour, lime juice and vanilla until fully combined.

    5. Add food coloring if desired.

    6. When crust is done, remove and pour filling/top on the hot crust.

    7. Bake for 20 more minutes. Remove and let cool completely.

    8. Cut into squares and stick in the fridge for about 1-2 hours. Serve and enjoy.
