- 1 Tbsp. extra virgin olive oil
- 4 red peppers, sliced into thin strips
- 4 carrots, sliced
- 1 small can light pear halves, diced
- 2 c. crushed tomatoes in puree
- 1 Tbsp. basil
- pepper to taste
- 1 pkg. linguine
- Parmesan cheese
Directions

1Combine olive oil, red peppers, carrots, pears, crushed tomatoes, basil and pepper.

2Stir and simmer over low heat for 45 minutes.

3Pour sauce over cooked linguine and top with Parmesan cheese.

4Serve with green salad and hot bread.
