- 125g almond meal
- 1/3 cup Norbu
- 1/2 teaspoon baking powder
- 1 large egg white
- 12 mini easter eggs*
Directions

1Preheat oven to 170°C and line a baking tray with baking paper.

2Combine almond meal, Norbu and baking powder in a medium sized bowl and make a 'well' in the centre.

3Whisk egg white until foamy and add to middle of bowl, stirring gently beginning in the centre with a wooden spoon until all ingredients are combined into a dough. Don't overmix or the dough will become tough.

4Take tablespoons of mixture and roll into a ball, place on tray and gently push an egg into each biscuit.

5Bake for 15 minutes or until lightly coloured. Cool on tray for 5 minutes then transfer to a wire rack to cool completely.

6*Substitute easter eggs for almonds all year round.
