- 12 cup frozen chopped spinach (thawed, drained, and squeezed dry)
- 12 cup spaghetti squash, cooked and shredded
- 1 egg, beaten
- 3 egg whites
- 1 (12 ounce) can evaporated skim milk
- 1 cup part-skim mozzarella cheese
- 13 cup breadcrumbs, finally crushed

Directions

1Preheat oven to 350 degrees F.

2Place cooked, shredded squash in a mixing bowl.

3Stir in egg, egg whites, evaporated milk, spinach, and mozzarella.

4Spray a 9-inch pie plate or quiche dish with cooking spray.

5Coat the bottom and sides of the dish with bread crumbs.

6Pour egg and squash mixture into dish.

7Bake 45 minutes, or until a knife inserted in the center comes out clean.

8Allow to cool before slicing.

9Serve warm or at room temperature.
