Low-Fat Bread Pudding

Ingredients
- 6 slices white bread
- 2 Tbsp. fat-free oleo
- 1/2 c. raisins
- 1/3 c. sugar
- 6 egg whites and tiny bit of 1 yolk
- 3 c. skim milk, scalded
- 1/4 tsp. cinnamon
- 2 Tbsp. sugar
Directions

1Toast bread that has been buttered.

2Soak raisins in boiling water for 5 minutes, then drain.

3Tear bread into small pieces and place in baking dish.

4Sprinkle on the raisins.

5Scald milk.

6Stir in the 1/3 cup sugar.

7Beat eggs slightly and add to warm milk. Stir until sugar is dissolved.

8Pour milk mixture over bread and raisins and let stand about 10 minutes.

9If toasted bread floats, push it down.

10When the bread is well soaked, mix the 2 tablespoons of sugar and the cinnamon and sprinkle on top.

11Bake, uncovered, for 30 minutes at 350°.

12This may be served hot or cold.
