  • 1 lb. ground turkey (raw)
  • 1 c. chopped onion
  • 2 cloves garlic
  • 1 (16 oz.) cans tomatoes, cut up
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 2 tsp. dried basil, crushed
  • 1 tsp. oregano, crushed
  • 1 tsp. fennel seed, crushed
  • salt to taste
  • 1/8 tsp. ground red pepper
  • 8 oz. lasagna noodles
  • 1 beaten egg
  • 2 c. low-fat Ricotta cheese or cottage cheese
  • 3/4 c. grated Parmesan cheese
  • 1 Tbsp. dried parsley flakes
  • 1/2 tsp. pepper
  • 8 oz. Mozzarella cheese (low-fat)

    In skillet, cook meat.

    Add onion and garlic and cook until brown and onion tender.

    Drain any fat.

    Stir in next 7 ingredients, stirring often, for about 15 minutes.

    Cook noodles (no oil) and drain.

    Stir together egg, Ricotta or cottage cheese, 1/2 cup Parmesan cheese, parsley and pepper.
