- 2 c. all-purpose flour
- 2 Tbsp. plus 1 tsp. sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 1/2 c. egg substitute
- 3/4 c. milk
- 1/4 c. applesauce
Directions

1In a mixing bowl, combine flour, sugar, baking powder and salt. Make a well in the center.

2Combine egg substitute, milk and applesauce.

3Pour into well and mix just until dry ingredients are moistened (do not overmix).

4Spoon into greased muffin cups.

5Bake at 400° for 20 to 25 minutes or until golden brown.

6Yields 1 dozen.
