Low-Fat "Not Fried Rice"

Ingredients

  • 1/2 c. finely chopped onion
  • 1 tsp. liquid Butter Buds or chicken broth
  • 2 c. canned fat-free chicken broth
  • 1 Tbsp. sherry or cooking sherry
  • 1 Tbsp. reduced sodium soy sauce
  • 4 drops Tabasco sauce
  • 1 c. uncooked long grain rice
  • 1/3 c. diagonally sliced green onions
  • 1 Tbsp. toasted pine nuts

Directions

    Coat medium saucepan with Pam cooking spray.

    Place over medium heat until hot.

    Add onion and saute in liquid Butter Buds or chicken broth for 2 minutes.

    Add 2 cups chicken broth and next 3 ingredients; bring to boil.

    Stir in rice and cover.

    Reduce heat and simmer for 25 minutes or until rice is tender and liquid is absorbed.

    Remove from heat and stir in green onions and pine nuts.

    Makes 6 (1/2 cup) servings.
