- 1 whole boneless chicken breast, cut in strips
- 1 onion, sliced
- 1 tsp. crushed garlic
- 2 Tbsp. safflower oil
- 2 c. water
- 2 c. chicken broth
- 1 c. uncooked brown rice
- 1 Tbsp. paprika
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper
- 1/2 tsp. salt-free herb seasoning
- 1 Tbsp. dried parsley
- 1 (14 oz.) can chopped tomatoes
- 1 (10 oz.) pkg. frozen peas
- 2 Tbsp. chopped pimientos
Directions

1In large pot, saute chicken, onion and garlic until chicken is slightly brown.

2Add water, rice, broth, seasonings and tomatoes. Bring to boil.

3Reduce heat.

4Cover.

5Simmer 45 minutes.

6Stir in peas and pimientos.

7Simmer 10 minutes.
