  • 5 Tbsp. reduced fat margarine
  • 1 1/4 c. sugar
  • 3 egg whites
  • 1 1/2 tsp. vanilla extract
  • 1 2/3 c. unbleached flour
  • 1/2 c. oat bran
  • 1/2 tsp. baking soda
  • 1 c. vanilla or lemon nonfat yogurt

    Combine margarine and sugar; beat until smooth.

    Add egg whites and vanilla; beat.

    In separate bowl, combine flour, oat bran and baking soda.

    Add flour mixture and yogurt to margarine mixture.

    Beat just enough to mix well.

    Coat an 8 x 4-inch loaf pan with nonstick cooking spray.

    Bake at 350° for 55 minutes. Let sit for 20 minutes.

    Cool on wire rack.
