- 5 Tbsp. reduced fat margarine
- 1 1/4 c. sugar
- 3 egg whites
- 1 1/2 tsp. vanilla extract
- 1 2/3 c. unbleached flour
- 1/2 c. oat bran
- 1/2 tsp. baking soda
- 1 c. vanilla or lemon nonfat yogurt
Directions

1Combine margarine and sugar; beat until smooth.

2Add egg whites and vanilla; beat.

3In separate bowl, combine flour, oat bran and baking soda.

4Add flour mixture and yogurt to margarine mixture.

5Beat just enough to mix well.

6Coat an 8 x 4-inch loaf pan with nonstick cooking spray.

7Bake at 350° for 55 minutes. Let sit for 20 minutes.

8Cool on wire rack.
