Low-Fat Strawberry Pie

  • 1/4 box no-fat crackers
  • 3 Tbsp. no-fat yogurt
  • 2 Tbsp. applesauce
  • 1 qt. fresh strawberries
  • 1 c. water
  • 3/4 c. sugar
  • 3 Tbsp. cornstarch
  • 3 Tbsp. strawberry Jell-O
  • 2 Tbsp. lemon juice
  • no-fat whipped topping (if desired)

Directions

    In 1 (10-inch) pie pan, crush crackers.

    Mix yogurt and applesauce.

    Press into pie pan. Bake for 10 minutes at 350°. Cool. Wash and hull strawberries and slice or leave whole. Cook water, sugar and cornstarch until mixture is thick and glossy, stirring constantly.

    Lower heat and simmer 5 minutes. When mixture is clear, add Jell-O and lemon juice. Stir and cool.

    Add strawberries and pour over crust.
