Luncheon Asparagus

Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 c. milk
  • 1 c. grated Cheddar cheese (mild)
  • 1 small onion, grated
  • 1 (3 oz.) can mushrooms, drained
  • 1 (14 oz.) can asparagus spears, drained or fresh cooked asparagus
  • 4 toasted English muffins
  • 8 pieces crisp bacon
  • 1/4 c. sherry (optional)
  • salt and pepper

Directions

    Melt butter; add flour and cook for several minutes.

    Add milk gradually, stirring until thickened; add cheese and allow to melt. Salt and pepper to taste.

    Add onion and mushrooms.

    Put asparagus on muffins; pour sauce over this and sprinkle with bacon pieces.

    Sherry may be added to sauce.
