- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 c. milk
- 1 c. grated Cheddar cheese (mild)
- 1 small onion, grated
- 1 (3 oz.) can mushrooms, drained
- 1 (14 oz.) can asparagus spears, drained or fresh cooked asparagus
- 4 toasted English muffins
- 8 pieces crisp bacon
- 1/4 c. sherry (optional)
- salt and pepper
Directions

1Melt butter; add flour and cook for several minutes.

2Add milk gradually, stirring until thickened; add cheese and allow to melt. Salt and pepper to taste.

3Add onion and mushrooms.

4Put asparagus on muffins; pour sauce over this and sprinkle with bacon pieces.

5Sherry may be added to sauce.
