Ingredients

  • 2 c. cooked elbow macaroni
  • 2 c. chopped seeded cucumbers
  • 1 1/2 c. thinly sliced red cabbage
  • 1/4 c. sliced celery
  • 1/4 c. sliced green onions and tops
  • 10 cherry tomatoes, cut in 1/4's
  • 1/2 c. reduced fat salad dressing
  • 1/4 c. reduced fat sour cream
  • 2 tsp. lemon juice
  • 3 to 4 tsp. Dijon style mustard
  • 2 tsp. lemon juice
  • 1 tsp. white vinegar
  • 2 Tbsp. minced parsley
  • 1 1/2 tsp. dried dill weed
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper

Directions

    Combine macaroni, cucumber, cabbage, celery, green onions and tomatoes in a large glass bowl.

    In a separate bowl, combine remaining ingredients.

    Spoon over macaroni mixture and toss. Cover with plastic wrap and refrigerate several hours for flavors to blend.
