Macadamia Crusted Roughy

  • Orange Roughy Filets (2) appx 5 oz each
  • egg
  • milk, salt, pepper
  • macadamia nuts
  • thyme
  • ginger
  • flour
  • oil
  • shredded coconut
  • mango or pineapple chutney if desired

    Dip fish filets in mixture of 1 egg, 1 tbsp milk, 1/8 tsp salt, 1/8 tsp pepper. Place ground macadamia nuts (appx 1 cup) in a shallow bowl, stir in 1 tsp fresh ground ginger and 2 tbsp fresh chopped thyme another 1/8 salt and 1/8 tsp pepper. Place flour on plate or waxed paper (few tbsp for 2 filets) dip filet in flour and than into egg mix and than into nut mixture-press well so coats evenly both sides. Heat oil (any vegetable, canola, soy or olive oil) on medium high heat-Fry filets appx 3-5 minutes until browned. You can than place skillet in oven (preheated 350 degrees) for another 5 minutes until fish is done (flakey) When done top with coconut and serve with any fruit sauce or chutney of your choice.. Pineapple or Mango is wonderful.
