  • 1/2 cup butter, chopped, softened
  • 1/3 cup brown sugar
  • 2 None eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups self-rising flour, sifted
  • 1/2 cup light sour cream
  • 1/2 cup 2% milk
  • 1 cup macadamia nuts, chopped

  • 1/4 cup macadamia nuts, chopped
  • 2 tbsp rolled oats
  • 2 tbsp brown sugar
  • 1 tbsp maple syrup

Directions

    Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.

    Cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Mix in vanilla. Fold in flour alternately with sour cream and milk. Fold in macadamia nuts. Transfer to prepared liners.

    For the crumble, combine all ingredients in a small bowl. Sprinkle evenly over each cupcake. Bake for 15-20 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
