- 1 1/3 c. sugar
- 3/4 c. sifted flour
- 1/2 tsp. each: baking powder and salt
- 6 egg whites
- 1/2 tsp. each: cream of tartar, vanilla and almond extract
- 1 (3 1/2 oz.) can coconut
Directions

1Sift 1 cup sugar with flour, baking powder and salt.

2Beat egg whites until stiff but not dry.

3Add cream of tartar.

4Beat remaining 1/3 cup sugar in gradually.

5Add flavoring.

6Fold sifted dry ingredients into mixture.

7Add about 2 tablespoons at a time. Gently fold in coconut.

8Fill paper lined muffin pans about 2/3 full.

9Bake at 300° for 40 minutes.
