- 2 egg whites
- 4 oz. ground almonds
- 8 oz. sugar
- 1 Tbsp. ground rice
- few drops of almond essence
- little egg white to glaze
Directions

1Whisk egg whites stiffly.

2Stir in almonds, sugar, ground rice and flavorings.

3Grease baking sheet or flat pan.

4Cover with greased brown paper.

5Place mixture in heaps (small) or pipe small rounds, leaving room to spread.

6Place an almond on top and bake at 350° for 20 to 25 minutes.

7It is important to bake macaroons slowly to allow to color evenly and get a good texture.
