- 8 to 10 carrots, peeled and sliced
- 6 Tbsp. butter
- 1 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. tarragon
- 4 Tbsp. Madeira wine
- fresh parsley to garnish
Directions

1Melt butter in saucepan. Add carrots, sugar, salt and wine. Cover and cook over medium heat for 6 to 8 minutes.

2Lower heat and cook for an additional 10 minutes. Remove lid.

3Sprinkle with tarragon and parsley.

4Makes 6 servings. Delicious!
