5 steps

Ingredients

  • 5 tablespoons unsalted butter
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 egg
  • 1/2 lemon
  • 1 teaspoon orange flower water or orange zest
  • 1/3 cup granulated sugar
  • powdered sugar for dusting

Directions

  1. 1
Preheat oven to 375. Melt the butter in a saucepan over medium heat. Brush a little of the melted butter in the molds of a madeleine plaque. Reserve the remainder and let cool to lukewarm.
  2. 2
Sift the flour, baking powder, and salt into a bowl. Combine the egg, lemon zest, orange-flower water, and granulated sugar and beat lightly.
  3. 3
Stir into the flour mixture and beat for a few seconds longer until well combined. Add the reserved butter and beat just long enough to incorporate thoroughly without overmixing.
  4. 4
Spoon the batter into the molds of the prepared plaque, filling each one half full. Place on the middle shelf of the oven and back for 12-15 minutes, until golden and starting to brown at the edges.
  5. 5
Unmold and place on a rack. Dust with confectioners' sugar and serve while still warm. Makes 12 3-inch madeleines.
