  • 125g unsalted butter, at room temperature, cubed
  • 220g (1 cup) caster sugar
  • 225g (1 1/2 cups) plain flour
  • 1 1/2 tsp bicarbonate of soda
  • 1 1/2 tsp salt
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 c. milk
  • 1 egg
  • 2 coarsely chopped apples
  • 280g apple puree
  • 1 c. chopped walnuts
