Ingredients
- 1 cup brown sugar
- 3 tsp. apricot jam
- 1 tsp. bicarbonate of soda
- 1 tsp. vinegar
- 1 egg
- 1 cup flour
- 1-1/3 tbsp. butter
- 1 cup milk
- 1 cup cream
- 4-3/8 oz. butter
- 1 tsp. vanilla
- 3/4 cup sugar
- 1/2 cup boiling water
Directions

1Beat egg and brown sugar till thick and light.

2Stir in jam.

3Sift flour and bicarbonate of soda together.

4Melt butter and vinegar, and then add milk.

5Add sifted dry ingredients to egg mixture alternating with milk mixture.

6Pour batter into greased ovenproof dish.

7Bake at 180 C for approx.

830 minutes, or until lightly browned.

9Combine sauce ingredients and bring to the boil.

10Pour over pudding as soon as it is removed from the oven.
