Ingredients

  • 1 cup brown sugar
  • 3 tsp. apricot jam
  • 1 tsp. bicarbonate of soda
  • 1 tsp. vinegar
  • 1 egg
  • 1 cup flour
  • 1-1/3 tbsp. butter
  • 1 cup milk
  • 1 cup cream
  • 4-3/8 oz. butter
  • 1 tsp. vanilla
  • 3/4 cup sugar
  • 1/2 cup boiling water

    Beat egg and brown sugar till thick and light.

    Stir in jam.

    Sift flour and bicarbonate of soda together.

    Melt butter and vinegar, and then add milk.

    Add sifted dry ingredients to egg mixture alternating with milk mixture.

    Pour batter into greased ovenproof dish.

    Bake at 180 C for approx.

    30 minutes, or until lightly browned.

    Combine sauce ingredients and bring to the boil.

    Pour over pudding as soon as it is removed from the oven.
