  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 12 cups sugar
  • 12 teaspoon salt
  • 3 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup salad oil
  • 2 cups mangoes, diced (not too ripe or stringy)
  • 12 cup walnuts, chopped
  • 12 cup coconut, fresh or frozen
  • 12 cup raisins

Directions

    Preheat oven to 350 degrees.

    In a mixing bowl combine first 5 ingredients.

    To them, add all remaining ingredients.

    Grease 2 large loaf pans and bake for 55-60 minutes or until a toothpick (or fork) poked into the center comes out clean.
