- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 12 cups sugar

- 2 cups mangoes, diced (not too ripe or stringy)

- 12 cup coconut, fresh or frozen
- 12 cup raisins

1Preheat oven to 350 degrees.

4Grease 2 large loaf pans and bake for 55-60 minutes or until a toothpick (or fork) poked into the center comes out clean.
