- 1/2 c. barbecue sauce
- 1/2 c. orange juice
- 1/4 c. brown sugar, packed
- 2 Tbsp. oil
- 2 Tbsp. flour
- 1/4 tsp. salt
- 4 c. cooked chicken
- 1 c. (13 1/2 oz.) pineapple chunks, drained
- 1/2 c. sliced water chestnuts
- 1 tsp. candied ginger (optional)
- cooked rice
- Macadamia nuts or almonds
Directions

1Combine barbecue sauce, orange juice, brown sugar, oil, flour and salt; mix well.

2Cook, stirring until mixture comes to a boil and thickens slightly.

3Add chicken, pineapple, water chestnuts and ginger.

4Cover and simmer for 10 minutes.

5Serve over hot rice and sprinkle with toasted nuts.
