- 5 c. firm half-ripe mangos
- 1 glove garlic, chopped fine
- 3/4 c. chopped, preserved ginger
- 1/2 c. chopped onion
- 4 c. sugar
- 1 1/2 c. raisins (golden if possible)
- 1 tsp. salt
- 2 finely chopped chili peppers
- 1 1/2 c. vinegar
- 1 tsp. each: cloves, allspice and nutmeg
Directions

1Peel and cut mangos in pieces.

2Cook sugar and vinegar to a boil.

3Add garlic, ginger, onion, salt, raisins, peppers and spices.

4Cook 10 minutes.

5Add mangos and cook until transparent.
