  • 5 c. firm half-ripe mangos
  • 1 glove garlic, chopped fine
  • 3/4 c. chopped, preserved ginger
  • 1/2 c. chopped onion
  • 4 c. sugar
  • 1 1/2 c. raisins (golden if possible)
  • 1 tsp. salt
  • 2 finely chopped chili peppers
  • 1 1/2 c. vinegar
  • 1 tsp. each: cloves, allspice and nutmeg

Directions

    Peel and cut mangos in pieces.

    Cook sugar and vinegar to a boil.

    Add garlic, ginger, onion, salt, raisins, peppers and spices.

    Cook 10 minutes.

    Add mangos and cook until transparent.
