  • 2 cups Quinoa, Uncooked
  • 1 cup Frozen Mango Chunks, Thawed
  • 1/2 cups Red Onion, Diced
  • 1 whole Medium Red Pepper, Diced
  • 1/2 cups Cilantro, Chopped
  • 1- 1/2 cup Coconut, Shredded And Unsweetened
  • 3/4 cups Slivered Almonds
  • 1 cup Golden Raisins
  • 2 cups Frozen Edamame, Thawed
  • 5 whole Limes, Juiced
  • 3 Tablespoons Balsalmic Vinegar

Directions

    In a medium saucepan, cook quinoa according to package instructions.

    In a large bowl, combine quinoa, mangoes, red onion, red bell pepper, cilantro, coconut, almonds, raisins, edamame, lime juice, and balsamic vinegar.
