- 1 1/2 cups diced mango
- 1 cup red onion diced
- 2T. rice wine vinegar
- Ice water
- 1 cup diced red bell pepper, roasted
- 1 cup jalapenos, seeded, diced
- 1-2T fresh lime juice
- Sea salt to taste
- 1 T cilantro
Directions

1Use firm, but ripe mangoes, they are the easiest to dice. Put the onion in a shallow dish and cover with vinegar and ice water.

2Soak for 30 minutes. Strain.

3In a glass bowl, gently combine the mango, onions peppers and jalapenos. Season to taste with lime juice, salt and cilantro. Refrigerate one hour to chill before serving.
